Motor mount inserts would cure your problem, but turn your whole car into a full body massager.
I had a leak problem on my RSR header -> stock cat connection, but it was only at high rpm. Tightening the spring bolts fixed it.
Have you though of replacing that doughnut-like gasket?

I've replaced the donut gasket and both bolts/springs. I also have motor mount inserts in there.

I've got a fairly loud popping sound when starting off in 1st gear, then shifting to 2nd, then 3rd.. I hear it less as I go up in gears. It appears to be when the motor rocks back and forth.
Numerous folks have told me there is a gap between my cat and either it's inlet or it's outlet. The outlet of the cat connected to the rest of the exhaust appears to be sealed completely tight. However, at the inlet to the cat, there is a slight gap where I can see the gasket, even though I am unable to tighten the spring bolts any more than they are now. I've even tried putting in straight bolts without the springs and tightening them as tight as possible. It just gets worse and worse. I've replaced the gasket and even have replaced the springs.
Any ideas?

Is there any "visual" indication that you are leaking exhaust at the front of the cat (like some discoloration or carbon residue) ??? If not, this may not be your problem.
